Biography
Chef Juan Pablo Chavez
creates freshly prepared, healthy and delicious
tasting gourmet meals in the kitchens of a cross-section
of New York City individuals and families.
He developed his passion
for food while helping his grandmother in the kitchen of
their Mexico City home. After years as an economist,
living in both New York and London, he followed his
dream and graduated from the Institute of Culinary
Education. He trained at acclaimed four-star New York
restaurants Per Se and Le Bernardin, then joined Whole
Foods Markets as a chef. He continues to develop recipes
for the company, in addition to consulting with the SoHo
restaurant Papatzul on their desserts. Chef Juan Pablo
has a love of great food--made out of a few simple
ingredients or even more elaborate creations. While he
is partial to his native Mexican regional food, he
adores Mediterranean cuisines as well as modern
California/American dishes, and the fresh simplicity of
Australian/New Zealand preparations. He has an extensive
culinary knowledge and has traveled widely to many
heralded wine and gastronomic regions including Europe
(England, France, Italy, Spain, Portugal, Greece,
Austria), Asia/Pacific (Thailand, Hong Kong, Australia,
New Zealand), and of course Latin America (Mexico,
Argentina) among other places.
Formerly an economist, he
graduated with a Masters from the London School of
Economics and is a native of Mexico City. He founded
Healthy Meals JPC, LLC to further his great passion for
food, wine and entertaining for sophisticated clients.
In addition to his
personal services, Chef Juan Pablo also teaches basic
cooking techniques in small groups, and has developed
recipes for individuals with special dietary needs. He
has served as a recipe consultant and spokesperson for
companies as diverse as Absolut’s LEVEL vodka and The
Economist magazine. Chef Juan Pablo is also available to
cook for special occasions like romantic dinners or
family holiday get-togethers, and offers gift
certificates for his services as well.
Chef Juan Pablo Chavez has
made his home in New York City since 1997, and is fluent
in English, Spanish and French and has some knowledge of
Portuguese and German. Beyond food and wine, he loves
practicing yoga, swimming and enjoys all sorts of films
and theatre.
